Yes, the name sounds native-Filipino but neither longganisa nor langostino are native words. Anyway, cut to Sunday (linggo) morning: fate’s hand made the last of my Dalandan half gallon into a mimosa so an accompanying brunch was imminent. After raiding my freezer, a trip to Seafood City, and some tosses of a wok, what became was spiritually Filipino but also serendipitously Louisianian. The combo proved winsome.
